If you enjoyed the raspberry nutella wafflewich (a cross between a sandwich & a waffle) we made a few months ago, then you’ll probably like this lunch version wafflewich. My friends Flora, Kiera and I made these delicious wafflewiches with cheese and fresh spinach! You can use almost any kind of cheese (mozarella, cheddar, goat, swiss), regular of gluten-free bread, and your favorite vegetable as long as it is thinly sliced. Cheese & Veggie Wafflewich (Series #2)

This is a quick & easy snack or meal that kids can make. Adult supervision required. Use caution because parts of the waffle iron may be hot and can cause burns. Make sure to subscribe to our weekly newsletter to get more great kid snack ideas.

Ingredients/Materials

  • 2 slices of soft bread (regular or gluten-free)

  • Slice of your favorite cheese

  • Spinach leaves or arugula, kale or basil leaves

  • A wafflemaker

Instructions

  1. Butter wafflemaker

  2. Lay slice of bread with spread onto wafflemaker, spread side up

  3. Place a slice of cheese onto the above slice of bread

  4. Add some thinly sliced veggies or spinach leaves (one layer)

  5. Place other piece of bread over the ingredients

  6. When wafflemaker indicates it is ready, close lid* (*If bread is too thick for wafflemaker to close, just close it as far as you can and hold it there)

  7. After two or three minutes check your wafflewich

  8. Done when bread is slightly golden brown

Notes

Best when you use soft bread that is sliced thinly. Other veggies that would work well: thinly sliced bell peppers, basil, arugula, tomato.
